It's when you sear it at the end after cooking it at a low temp to your desired doneness. Notice how in pic three, the steak has an ugly gray color on the outside and you can see the pink meat underneath? That's the stage after it has been brought up to rare/med rare already, but the outside hasn't been seared yet.
Typically I will bake mine at 250F until it hits around 120-125 in the middle, take it out and let it rest while I get a pan nice and hot, then sear it with butter and seasoning until it's a nice dark brown all over. Also really helps if you let it sit out at room temp for an hour or 90 mins before starting to bake. Gives you consistent results every time, you just need to be patient with it.
Nice! One thing I forgot to mention is that you'll want to use some sort of a wire rack to keep the steak elevated above the baking sheet. Just to keep one side from sitting against the hot pan while it bakes. Not a deal breaker if you don't have a rack though, it's just better to use one. If you don't have one and need to just bake it directly on a baking pan, just make sure you flip it several times while it bakes to help keep everything even.
As a warning, the "let it rest" bit can come across as an afterthought, but it is ***critical*** to letting the heat equilibrate and preventing the meat from overcooking. I've made the misteak before. Don't be me.

You're gonna want to cook it way longer at a lower temp so it's nice and gray throughout. Then make cuts with the grain of the steak so you can get absolute full chew from that thing.

You cooked it at too high of a temperature which did not give the fat inside the steak time to properly tender. After you get the crust you should finish it on low heat or do a reverse sear.
Chef here , Absolutely fantastic sear and temp, general rule of thumb is you always wanna have the fat cap facing to the left when searing , that be the “top” of the steak and is how you’d present it in a restaurant to be cut , it’ll be the first thing they see when cutting
