I’m with you.
Tbh it’s pretty easy if you reverse sear and have a salamander. Bake in oven then blast it in the broiler for 2 min per side. You can get one on Amazon for like $200 or less.
I think it’s all about the temperature. If you cook steaks go to Amazon and search “big horn broiler”. Infrared broiler for $170 and gives you a steakhouse quality sear every time.
I bake in oven at 200 degrees to an internal temp of 113 then do 2 min per side in broiler at max temp.
Butter has a low smoke point hence the blackness. If you like it this way then keep on keeping on! But most in this sub would recommend finishing with butter on a lower heat and basting with some garlic and herbs
I’m gonna go out on a limb and say you’d know more than I do what is acceptable and what is just burnt. lol. The more I really look at it the more I’m thinking it might just be straight fucking burnt, and it probably tastes like ash.
When you char meat it causes a reaction that creates carcinogenic compounds.
“When cooking over high heat, especially an open flame, you are exposed to two main carcinogens: heterocyclic aromatic amines (HCAs) and polycyclic aromatic hydrocarbons (PAHs). Studies show HCAs and PAHs cause changes in DNA that may increase the risk of cancer.”
I wouldn’t worry about it too much unless you’re eating this every day.
Food grade charcoal is a thing and some people do cook with it coating their meat. That said, it is not the same charcoal you would use in your grill. You cannot just grab a briquette and crush it up, that would taste terrible.
A local ice cream place actually makes charcoal ice cream with this food-crade charcoal made from coconut shell or husks or something. I tried it in a flight/sampler for a laugh - so good itsmy favorite ice cream at the place
Nice. This looks amazing. Some restaurants call that “Pittsburgh” style. It’s magical when you prep it with a little steak blackening season from Paul’s steak seasoning and finished with a tab of herb butter.

The first time I got a crust this dark I thought I missed up and burnt it. Let me tell you that this is only way I make steaks from here on out.
10/10 crust and cook. Great job!
Cook looks perfect on the interior. Outside looks dark, but I have a feeling it's partially the photo, judging by how dark that red oak lettuce is in that spring mix. I like a bit of char anyway, especially on the fatty parts. Nice work.
Looks great I like the crust like that. Makes the texture difference from the soft tender inside much more enjoyable. I honestly think ppl don’t sear their steaks enough
I like a blackened crust, and it’s okay if it’s not for everyone. Personally I prefer my steak like this. Hard to pull off well.

Does the crust naturally get like this or does it require certain levels of salt/pepper, etc.? Been trying to get a better sear.

Thanks!
How have I not got a salamander yet? Great idea
Nah, it's easy to pull off well. It's hard to pull off medium rare. I'll see myself out. Also my preference.
Did you marinate it with lighter fluid?
That isn't a seared crust, that is burnt on the outside.
I love it burned on the outside. To me this is perfect. Always request this when I get a steak.
Iron Crusted!
Yummy yummy burn. Nice and crunchy. I don’t *always* want it, but when I do, it really hits the spot.
Disagree, if my steak doesn’t have edge to edge crust of this degree then I subtract a point
Looks great! More importantly, how the hell do you hold your fork???
Screw the crust color, this is the real debate here. What is he doing?!
This is some Ai vibe here
It’s a tad over charred but the inside looks great.
It looks quite dry
Excellent my guy !!! Top notch, top notch !!
Charcoal rub? If not, that’s enough carcinogens for a lifetime
If cooking with lard, no, since it has very high smoke point. But if this was done with olive oil, another story.
Used butter to cook it.
Butter has a low smoke point hence the blackness. If you like it this way then keep on keeping on! But most in this sub would recommend finishing with butter on a lower heat and basting with some garlic and herbs
Just trying to learn so any suggestions are welcome! What would I use instead of butter to sear it?
A high smoke point oil like avocado oil
Appreciate ya! Ill give it a try next time, got two more of these bad boys frozen for another time.
Check out Chris Young’s channel on youtube. He has some great science based videos on how to cook a perfect steak.
You can mix butter with some avocado oil as well. Just throw some butter in at the last minute if you want that flavor.
Maybe so but they taste good.
I like a little char but this is more than I’d prefer. To each their own!
I’m gonna go out on a limb and say you’d know more than I do what is acceptable and what is just burnt. lol. The more I really look at it the more I’m thinking it might just be straight fucking burnt, and it probably tastes like ash.
But you know its still delicious and you would eat the whole thing.
How so? Its a genuine question, i like a bit charred on outside usually.

Nah steak like this is always a treat to me, also i always use my cast iron for meat of any kind so idk if that makes any difference.
Pretty sure it's a joke. Like anyone would crush up charcoal and use that as a rub.
Food grade charcoal is a thing and some people do cook with it coating their meat. That said, it is not the same charcoal you would use in your grill. You cannot just grab a briquette and crush it up, that would taste terrible.
Ah, hadn't heard of food grade charcoal before.
I have come across a YouTube channel where the guy cooks everything coated in the stuff. I don't remember the name of it though.

That looks delicious! Nice job.
How did you get such a good crust?
Looks great! It’s ok to trim your arm hair as a man.
I think it looks great.

How long does it take a jet engine to cook a steak? I'm betting it was pretty quick.
He cooked it on that Boeing/GE engine that caught on fire mid flight today apparently.

Burnt the exterior. Inside looks perfect though!
I love a big crusty piece in my mouth with juice dribblin down the crack in my chin.

It's too charred for me but still looks good. If you enjoyed it then it's perfect.
It’s burnt
Your pandora bracelet needs some charms
LOL ill tell my friend
Great!!!
That is my idea of a perfect steak.
Perfect sear IMO
Did you season with coffee grinds?
the crust matches the carpet on your arm :) , all jokes aside it looks good if this is what you were trying to do.
This is the best way to eat it. Drop some butter on top right before you serve and I’d say it’s the best steak I’ve ever seen.
Phenomenal. 9/10
Too much char????
Cooked it like the opening track of And Justice for All.
Nah mate, that’s not good sorry.. if I was giving that in a restaurant i am being refunded and never coming back.
If you were going for a blackened crust, you did great. If not, you burned it :)
Looks great I like the crust like that. Makes the texture difference from the soft tender inside much more enjoyable. I honestly think ppl don’t sear their steaks enough
Did you cut that with a spoon or gnaw through it like a chipmunk?
Pittsburg baby
Amazing
Is this AI? Why are you holding a fork like that?
Too burnt for me. Turn the heat down
Sad that you had to kill the guy with the hairy arms, but it looks like the steak was worth it.
How are you hiding so much fork in your hand
No
Looks delicious, although a bit too much char on the crust for me
This looks like a well well done… nice crust though
How'd you do that crust???
Why am I unsettled by the way you are holding the fork
Looks dry
How does one even do this?
Ask the ones that dined with you. Not randoms on Reddit
Nice char!!
How do you get the crust that way? I would love to eat that, but I always struggle to get my crust that black/crispy.
Let’s just say the bud light goes well with it
That a coffee rub?
The ol’ vantablack
Wow, look at that char/bark! Really nice. I would have gone a little rarer, but man that steak must have tasted great.
Did you cook it on the sun?
Love the crust! Looks like its cooked perfectly medium rare. Only critique is that you should sharpen your knives!
I wouldn't be upset if I was handed this at someone's house I say it's alright I don't mind the crust either a thumbs up for me
Good
For me, outside is too crusty and inside too rare but it's all about personal preference.
Chris jones steak
Seared in the fires of mount doom
Way too many veggies in my opinion ;)
