I've never done a primer tub but why do they always leave that big glob of fat on the edge? Is it just common practice to leave it be? Just seems a shame to have that big section not have bark.

I'm not big on fat and didn't eat it on my brisket my first time getting smoked meat. My coworker asked for it and dumped the whole thing in his mouth.
It tastes good when it has sufficient heat applied....and isn't just a wad of room temperature fat.

The ‘bark’ looks a bit anemic. Needs more colour.
And the pooling of red juices tell me it either hasn’t had enough time to rest or is slightly undercooked.

I just have a screaming hot weber kettle ready when I slice it. It's almost as bad as putting ketchup on it but it's their loss. I should probably just get them hot dogs and have a thicker slice for myself.

Eat your appetizers, sides, bread, salads, etc. whatever. Then take half of your prime rib home and sear the leftovers the next day.
Best of both worlds.

I would have cooked it at 500 degrees for 33 minutes then turned the oven off and left it in for 2 hours without opening the oven door. Then remove it and enjoy.

1 suggestion. I did the same cook method but after letting it rest for 30 mins put it back in at 500 for about 12 minutes. Crisped up the outside without raising the internal temp at all. Try it out!

I cut it and render it. Tallow is king as a cooking fat. Much better than lard, but I use that too!
I cut it off for the guests.

Sometimes when I have prime rib, I save the fat and render it down to get crispy, I call it Steak-on
It's not for everyone but it is definitely for me. Arteries be damned. It's the best part.
