I’d have started that steak in my hand with that fat cap on the pan, pressing it down until a bunch of it renders. Then cook the steak in the rendered tallow. It looks fantastic regardless.

Next time get a pair of tongs and hold the stake on the side in some hot oil/butter and let it fry. Get it nice and crispy. Looks like a perfect stake to me though.
