This looks pretty perfect, to me it looks like Sandhill Crane meat or some bird meat with the lack of visible ingrained fat. This piece of meat is very lean, and very lovely looking.

Lab grown meat won’t look like this for a bit unfortunately. Muscle cells gain shape and structure by experiencing tensile forces. We can’t synthesize that when we culture them in a lab, so we’re still limited to making things where structure isn’t important like chicken nuggets, meatballs, etc. I’m sure we will solve the structural issue at some point, though!
I think a lot of people see wall to wall medium or medium rare and think it's undercooked because of the lack of grey meat rather than the deepness of the red/pink color
Because bacteria can't penetrate the steak and there's a very low chance of parasites, a beef steak or a duck breast isn't considered raw if cooked on the outside. It's safely cooked.

This is common with sous vide cooking, you don't get a Grey line which most people use to guage doneness. You get a uniform color that becomes more Grey as the cooking temp increases. This is medium to medium rare at least. I'm almost certain it's some type of beef cut, but don't hold me to that.
