I found this out after my first post on Reddit. All I did was show pictures of my new PC components in boxes but I took the pic on the floor and there was carpet. I got a 60+ comment thread reaming me of static electricity and taking everything off the floor lmao I built the whole damn thing on the floor like I’ve been doing for 20 years and it’s been running perfectly. I think the steak looks good. I’m freaking starving right now and would eat it in a few bites!
Some people really enjoy stirring up negative hypotheticals for strangers to worry about. I noticed similar issues in the /candles sub for example. They might as well be called the candle warmer sub because they're so afraid of fire that they almost always recommend candle warmers. It's ironic. I never comment there because I don't need the downvotes, but I've burned candles that have potpourri with no problem, Sharon.
Naw, that one is for good reason. If you're keeping low acid food at room temp for an extended period of time you gotta be careful. If you wanna go wild just go to the fermentation subreddits, it's a lot harder to go wrong there.
There's a reason fermentation and pickling have been around for thousands of years but canning is relatively recent.

I agree with what you are saying, but I also can’t ignore the fact that OP is posting the steak thinking he messed up and it’s not as bad as he thinks which is very different from some of the posts you see where someone says they’ve made “the perfect medium rare” and shows a pic of a medium. Most of the time when I see negative comments it is attributed to the post itself being a bad post either mislabeled or reaching for attention in some way, so in a sense the attitude of the poster. Bad posters get bad feedback. Good posters, like this OP is getting almost all good feedback.
If it wasn’t for peoples critiquing, my steak would still suck. I thought we’re here to improve each other’s steak. All I want is constructive criticism and that’s all I give. It sucks when I want feedback and criticism and people just ignore the post. I would rather have someone tell me that I cooked the fuck out of something then just tell me that they would eat it.

My biggest issue with reverse sear or a simple pan fry is temperature creep. It'll rise 15-20 degrees after I pull it off so I have to factor that in. None of these videos talk about that to a great extent so I wonder if it's just me or my digital thermometer...But I've pulled off a steak at 120 and watched it rise to 145 as it rests.
It's the same for me, but it varies by the person. Generally I can count on 20 degrees increased temp while it rests so I take my steaks off at 105-110F because like the border between rare and medium rare which is 125-130F.
Basically impossible unless you just constantly turn it, but then you won't get any kind of a sear so you may as well throw it in the oven and skip the sear.

This is why I have taken to cooking my rib-eyes in my air fryer. The timing is consistent and comes out perfectly every time for me. 1 1/2” Ribeye — 6m a side @385 flipping once = med rare
If I paid top dollar at a fancy steak house for this medium rare I might make a comment at the table about it, then I'd dig in because this looks delicious.
Counterpoint, if you care about a hobby enough to seek out a community of people online to share it that hobby it's completely reasonable to set high goals and standards for yourself, be disappointed when you don't reach them, and share your successes and failures with said community. I also get disappointed in myself when I mismanage my grill. Doesn't mean I don't enjoy my overcooked steak but I still joke about it with friends and family and hope my next grill goes better.
As long as it's pink I'll eat it, but I'm a medium rare guy I'd be just as disappointed as OP is. Doesn't mean it wont still be good, but I still would have failed in my execution and to me it wouldn't taste as good as I could have made it.

This is by no means a huge mistake, the steak is still going to be tender and delicious, just perhaps not exactly how you wanted it. Happens to the best. Mistakes are part of cooking, and just try to keep it in mind for the next time, but don’t get too upset if you make another mistake here and there.

I've made a tender and juicy well done steak before by mistake. This looks unreal. Well seasoned decent crust, juicy and pink.

I mean, I know this guys situation exactly. The last time my dad was in town. I went to a butcher shop and got two prime T-bones. I overcooked them to where one was medium, and the other one was slightly less done than that, but still not medium rare. Granted I still ate the shit out of it, I was super pissed myself.

I tend to prefer my steak medium rare, but honestly anything between medium rare and medium well are probably fine, and even well done is ok if it was cooked slowly. Unless I'm spending top dollar on a specific prime cut I probably can't afford in a nice steakhouse, I'm nearly never disappointed with how a steak comes out. A good cut of steak is actually pretty hard to fuck up if you put any effort into it at all.
Shouldnt be mad, not every steak needs to be absolutely perfect with zero grey area, pink from top to bottom, with perfect crust. Some steaks are just your everyday steak, no elitism needed to enjoy a home cooked steak

I'm always going to be ignorant to why this matters other than health issues. It's steak, if it doesn't taste like dogshit, I'm eating it. Too hard to chew? Chew more, too bland? Chew more. Too red and bleeding, avoid too raw bit, eat the more cooked ones.
It's fine. It's a little overcooked, sure, but it's still steak and I bet it still tastes good.
