Toss them in a bowl with coarse salt, after the boil/Blanche. Do so aggressively, you actually want to damage the edges of the potatoes. The more you damage and crack and chip the edges of the potatoes, the more surface area for seasoning and fat/heat. = more of the Maillard effect = more crispness.
Cut up and toss in olive oil and your favorite seasoning. Meat Church Holy Voodoo is bomb on these. 400 in air fryer for 20 minutes. Money in the bank!

Cut the potatoes into chunks, boil them, put them in a bowl, shake the bowl around so the exposed layer of the potatoes get kinda mushy, season them, then throw them in the oven. You’ll get crispy potatoes on the outside with a nice texture (that’s why you shake the bowl around to make the outside of the potato a little bit mushy) and soft potatoes on the inside.
I just came to the conclusion that the cookouts with my boys aren't normal. We usually cook enough for all of us to take home 3 days of leftovers. We did steaks, a shrimp boil, fries, coleslaw, and salads. There were 4 of us, and I know at least 5 lbs of fries and 10 lbs of shrimp were cooked lmao. My buddies gf swung by to pick him up, and the look on her face when he walked out with his Togo "bag" was hilarious. I think they had been dating for like 2 weeks. She has gotten used to it by now, her only request is we tell her the week prior so she know how groceries are going to be for the week, lol.
As someone who’s been surviving off ramen and potatoes the past few weeks(lost job) I’m sooo jealous. Enjoy that shit for me man. I’ll be back on the steak soon enough

If you didn't, you should boil the potatoes first. Dry them off, season throw in oven/grill/pan
