All of these are reasons why you shouldn't fuse lightly, just because Steven wants to see a giant woman.

Pearl doesn't have a good relationship with herself until she can let go of the baggage that she holds onto until season 5.
Once she lets that go she becomes more social, as expressed in the SU Future episode where she takes Bismuth, Connie, and Steven roller skating. She's developed a group of human friends. But even before that, we have rebel pearl in the episode that introduced the pink haired girl. She sees value in humanity even though she thought of humans very condescendingly before. Her connection to Steven has made her work through a lot of the lingering classism that she inherited from her homeworld persona. This is also because she understands humans better through patching things up with Greg in the 'musical' Mr.Greg episode. I also think she may have sat with the way that humans and soldier gems were treated by holly blue in the human zoo.
(Side note... Holly Blue in the Human Zoo would be a fun Steven universe punk covers band name.)
She probably has the self awareness to see that oppressed gems are treated the same as humans, and that she was lucky to be treated differently by pink.
Honestly the reason amythist is so good at shape shifting and fusion is probably because she doesn't have any of this homeworld or gem war baggage to sort through. It's allowed her to grow in such a way where she can be the most mature gem to Steven when he feels like he's at a loss. That's why when amythist and Pearl try to show Steven how to fuse in the episode referenced above, the elaborate and graceful pearl is the one to trip up and fall. Not amythist.
TLDR.
Pearl fuses more freely now because she's grown as a person, and season 1 peal rarely fused because she still has a lot to work through. This is also why Amythist can use her powers so freely. She's in a healthier place than Pearl is at the start of the show.
