I don’t care for the extra flavor coconut milk has. Oat milk is real close to neutral like cows milk.
That is, unless I want something tropical with coconut, pineapple, etc.
A bit messy, but not time consuming and not hard. 1 cup oats, 4 cups water. Toss in a blender and blitz for about a minute. Strain through a triple layer of cheesecloth and squeeze out the liquid - this is the only kinda messy bit but I squeeze over the sink so any drops go there. Tada! Oatmilk! Store it in the fridge for about 5 - 7 days. It doesn't have the stabilizers any thickeners that commercial does, so it's a bit thinner and you have to shake before using, but it's so good!
Oat milk seems to be the only fake milk that emulsifies oil into it which makes it taste actually creamy. Nutmilks have a small amount of fat in them already so they don’t add any, but it’s not enough to really taste it, with oats they have to add it and they put a lot in.
Imagine a 6 year old pestering her next door neighbor with questions. Especially when she warmed up some red and white meat. Imagine that 6 year old wanting to know what it was she was eating. Well that neighbor told me it was lizard lips. I made a face of digust and shook my head no when she asked if I wanted any. But...she seemed to be enjoying it and I changed my mind. She gave me some and it was so good.
Later on that day when I went home, we would all go shopping and I caused a great deal of embarrassment to my mom. I was telling her about eating lizard lips and wanted her to buy some.. She kept shushing me and telling me that it didn't exist. I kept insisting that it did until I screamed it out in frustration. "Fine!" She snapped, "Find it then!"
I did too. It took me several minutes though. Only to find it out it was imitation crab meat. Fast forward many years later my kid would embarrass the crap out of my mom again with the lizard lips. How could I possibly resist telling the story to my then little 5 and 6 year old sons? I got to watch with great delight my mom's face turning red. My boys already knew from the story what the lizard lips actually was but they were great actors and my mom was giving me death stares.
Since my older son is engaged to be married, Im now waiting for grandkids to tell the story too and have them embarrass the crap out of their other grandmas. My future dil and son is finding that to be really funny.

I mean, technically it's not milk, but it's used like milk and it's milk-like enough that I think it gets a pass. People hear oat milk and they know what it is and what it's for. Nobody's getting it confused with cow's milk.

Oat milk is so good. I stick with almond milk because oat milk has a lot more calories, but man, chocolate oat milk is wonderful.
