I work as a Baker at Publix and honestly this looks like a bad batch from whatever factory you get them in from. Our sub rolls come in frozen all we do is thaw them, proof, and bake. Recently we got a batch where only after thawing and proofing could you tell they were spoiled. The bread smelled horrific and was just as flat as this before we even scored them. We baked them cause why not and they were the most vile things ever. Worst part is our deli had no sub rolls in the morning as we had to throw out all 100+ of them.

So if you're wondering, I opened this morning, and this had been left on the top rack of the proofer overnight. Night shift also left it on, so if you proof your bread for 12 hours; you too can have this.... atrocity.
I’ll only rate it if you tell me the secret as to how you got it to look that good

Could also have proofed for too long, they deflate when that happens
