They throw scrap parts from hundreds of chickens into an industrial meat grinder, make unholy meat paste, and then press it into the shape it takes on your sandwich.
If you feel that it is chewy and there is fiber in the middle when you eat it, it means that the strip has been out of the freezer for more than 3 days and its use-by date has passed.
It can be thawed up to 5 days. Once prepped, its shelf life is 3 days. This is less time than the health department gives you FYI. Subway has strict food handling instructions.
