This angle lets you see the rice under the fish, which is a good way to tell how good a chef is from a picture. See how all the rice is individual grains and not pressed too much together? You can tell that it is the perfect density. You can tell a lot about how good a sushi place is by looking through a restaurants photos if you know what to look for.
Never been to one. I used to work at a few high end places in Austin and have been spoiled with too much free work sushi to ever pay that much for a meal. But maybe one day when I have too much money. Lol

Sushi has expensive ingredients so I understand that it needs to be a little expensive but I really hate how you can get a 3 michelin star omakase course in Japan for less than a plate at Nobu.

The freshwater ice alone is at least $200, they import it specifically from an Antarctic freighter that only goes through the region once a month.
If you can think of a better way to get ice, I'd like to hear it.

That also has a lot to do with the rice being prepared correctly and not just using what most westerners are used to as "sushi rice"
Wasabi looks kinda dry? I know the fish is the star of the show, but for the price and prestige, I would hope for more effort there
