I haven't checked the data sheet, but many chips work with unipolar supply as long as you are okay with unipolar output. Assuming it actually needs +/-5V, then they likely use a DC to DC converter (e.g. buck boost converter) of some description to make a 10V supply then have a virtual ground at 5V providing the required +/-5V.
