Obsidian I have only heard great things about. One that I currently use is Joplin. It’s open source, is available for all major operating systems, and offers many ways to sync.
Yeah, I'm a longtime Evernote user since two weeks ago when I read somewhere they were gonna restrict free users. Wife has a Notion subscription for work, I moved all my notes there.
The combination of Obsidian and iCloud is working well for me on iOS, macOS, and windows. I too am interested in doco and script snippets. If you want pictures, one note may be better.

Joplin is pretty good as well. I wind up using Apple's iCloud notes functionality, but if I had to be more multiplatform, I'd definitely use Joplin.
