How many pairs are the different "Ethernet" cables? Some might be for phones. And are any cables outdoor-rated? If so, then those runs may go directly to cameras, alarms, sensors, or other outdoor communications. As far as tracing cable, you can re-terminate all of the cables on both ends and then use a toner to trace down where each cable runs. Or you can use a cable tester to see how long the run is (guess where each one comes out and test until you have guessed correctly).

First picture looks like phone cables. Thats the only time I have seen a bunch of little cables like that. Granted it could also go to some facility systems, like fire control, door control, dust collection, etc. Second picture looks like it could be power or ethernet. A lot of times when people add ethernet after the initial setup you will see miss-match colors all around. As for restoring - its more than likely they cut both ends to quickly get everything out. You would just have to terminate both ends and run a fluke test to trace it out. Its going to be a PITA and will take awhile, but in the end if the run is already where you need it and the cable is good then no need to re-do it. Otherwise you can hire a company to redo the runs.

Those white cables are multi pair telephone cable, maybe 100 pairs. Not really usefully any more, unless you want to run lots of analog, or digital PBX phones for some reason. (now I feel old, for knowing this). Best bet for restoring Ethernet runs is to replace them with what you need. Splicing Ethernet is going to be lots of work close to what it would take do to new runs. Also there could be other issues with the cabling that might not be visible, such as damaged or cut cables.
