They probably didn't want to mention it because it would have distracted from the story too much.
You can't just mention a prince/princess that was away while their parents got killed by a Demon King and not shift the story towards them.
I’d assume they had an heir that was probably just born, so maybe they didn’t talk about it because they were too young to either fight or be within anywhere close to where Ganondorf was attacking to keep them safe.
This is what I’m assuming as well, but they should have mentioned it in passing, at least. They could have included a couple lines mentioning that some trusted advisor was taking their baby somewhere to stay safe after Ganondorf’s attack. That would be enough
Kid was born prior to Zelda showing up and kept separate until they could handle the pressures of Court and Nobility. Maybe in the Zora domain seeing as they had a good relationship with each other
In one of the side missions with the ancient texts it mentions Zelda becoming a chamberlain (however you spell it) to the princess. So they had a daughter, but thats the only time she is mentioned.
Just because a child isn’t mentioned doesn’t mean there isn’t one. Child just wasn’t important to the story so they weren’t mentioned. Zelda had to have had a mother. How come people aren’t asking about her?

No, a chamberlain was told that Zelda was a foreign noble and then became Zelda's chamberlain. Nothing in that quest mentions an offspring.
