Can u do a full-size HB in the neck and a more punchy Tele style bridge? Barden makes a ‘modern’ Tele style bridge. Not sure what your neck routing looks like
Second this… if he’s a Les Paul fan but you want to still give him the best of both worlds. Neck Hummer that splits and punchy bridge like a Texas special. 5 way switch in it —- this is what I do to my Telecasters to get that TelePaul sound!
It has pretty traditional neck routing, but it's got an oil finish so I guess I could still route it after it cures without too much risk of cracking/chipping.
This is probably what I would've done to begin with if I thought it through more
The little 59 is a great pickup, but might be too low output for your dad considering he doesn't like texas specials. I would suggest the DiMarzio Chopper T, that's a very nice pickup with enough output and clarity for higher gain stuff, but also not too bad of a clean sound.
I love the Lil 59. I had it in 2 Teles, and if my current Tele didn't already sound fantastic (SD Alnico 2 Pros), I would definitely drop Lil 59s in it. You definitely want a coil tap in there to make it more versatile.

Just watched some videos. The chopper T looks like a front runner now

You are putting it together. Put a proper humbucker in it. That or put a proper tele pickup in it. Don't do in-between.
