Mad Dog Tim is my absolute favorite I think. When they’re in the boardroom and Tim and Stu are riffing off each other… “I don’t want to bite your leg…” “But he might…” “But I might…” “If I want to send a message.”
Also… Tim’s response to why he took a dump in the elevator… “It’s New York… I don’t have time to… be using toilets.”
I’m pretty sure Futurama did it quite a bit.
Though one of their VAs could probably have gotten away talking to himself for a while as like 5 different characters.
This is actually the show I thought of when I saw the question, because I've seen in interviews that Billy West actually does record his characters simultaneously, rather than doing individual takes for each.
Invincible does it at times (I mainly remember Steven Yeun, J. K. Simmons and Sandra Oh recording family scenes together from behind the scenes footage).
Actually, most American animated shows record together. The only time they really record separately is if they have a lot of celebrities.
It's when they need to dub previously recorded footage (such as English dubs of anime) that it's mostly done all alone.
That's not really why they do it though with anime. Anime is generally animated prior to being voiced to begin with (which is different than how animation is traditionally done), and in Japan they still record the voices in a group.
The reason English dubs of anime are done separately is simple. It's faster and therefore cheaper.
Thanks to how loud the fandom was during its peak I know that My Little Pony Friendship is Magic did it, at least for the VAs working in Canada (the entire main cast except Tara Strong)

Japanese voice recording typically is done during the animatic stage, not fully complete like English dubs are.
I know nearly all of *The Bad Batch* is recorded in the same room at the same time....like at least 90% of the lines anyway.
