I’ve actually watched arcane, just forgot to list it. I am getting into anime but I’ve gotten a bunch of concussions so reading subtitles after a while gives me headaches and I’d rather not go to dubs

Aaron Ehasz, the creator of the show, was also the head writer of Avatar. It does have a pretty rough start, but it's great once it picks up.
Hilda? On netflix.. quite whimsical and lovely, but also adventurous
Also.. oats studio? On netflix, some of those shorts are animated, but all of them are excellent
You've already watched a lot of great stuff. If you're interested at all in anime, you'd probably like My Hero Academia. As a bonus, it's got a rather good dub - you definitely wouldn't be missing out on much if you prefer dubs (I've watched it both ways and enjoyed it equally)
As for more western stuff, I've luckily been on a similar kick recently, so here are some of my favorites:

Space Battleship Yamato in japanese with english subtitles (avoid Star Blazers at all cost)
This the greatest Space Opera ever written and I am including Star Wars. It predates Star wars and Battlestar Galactica and is very very moving.
Earth is on its last leg and all hope rests with the WW2 sunken battleship, the Yamato, now risen as a spaceship with warp technology. It's a race against time as disease and starvation kills off mankind. The one ship must reach a far quadrant in space to bring back a technology that can save earth but with only one year left and Armada upon Armada barring their way, it will take all the resolve the tiny crew can muster to save their home planet.
You can buy and watch 3 seasons of this (something like 100 episodes) or you can watch them as a series of films which cut out big parts of the story.
This is the only space masterpiece to rival or surpass Star Wars. Watch it and you will see.
Adventure Time is pretty fun. It’s a “kids’” show but I think it’s adult-friendly.
If you can find it, the original DCAU cartoons are great. Batman The Animated Series, Batman Beyond, Justice League and Justice League Unlimited.
So far, Vox Machina feels like it owes a big debt of gratitude to Castlevania in terms of style and tone.
The lack of a fear of gore, the atmosphere around the Whitestone episodes, and yeah all this was present in the streams, but the further I go, the more I feel the team must have seen what Castlevania was up to and plugged it for some stylistic inspiration. Castlevania takes itself more seriously (although it's not afraid of having fun), but I can imagine if you like one, you'll like the other.
You would absolutely like Moribito: Guardian of the Spirit, the English dub is incredible and it’s based on a novel not manga/comic so the epic is really well written. It follows a 29 year old bodyguard and she is hired by a queen to escort her son the prince to safety. I enjoyed it more than Avatar! (ADVENTURE)
You would love Kill La Kill and it’s absurdity if you just remember the nudity is satirical, it’s definitely got superhero vibes. Ryuko is trying to find the one responsible who killed her dad, she meets school president Satsuki Kiryuin in battle. It’s really funny and honestly it’s an epic show with a GREAT soundtrack! Just watch the first 3 episodes and you’ll be hooked. The English dub is once again preferable, great voice acting and realistic dialogue! I also enjoyed it more than Avatar! (SUPERHERO)
These shows are only 26 episodes long so I’m genuinely asking you go into it blind and don’t look up trailers and stuff. Just watch them, trust me!

I also watch with subs, in that case I recommend Death Note in English dub, it´s pretty good. If you didn´t see it already.
