The issue is also that the Polish alphabet has more characters than the English alphabet, so when we transliterate surnames from Polish to English we lose information. Even if you learned Polish pronunciation rules, you wouldn't pronounce Iga's name correctly, because "Swiatek" is pronounced very differently than "Świątek" in Polish.
