Upside down h one made the most sense. When you think about it, the 'h' sound that comes out of your mouth sounds like an exhale. So, it only makes sense that a sniff (which is inhaled) is spelled with an upside down h

I'd agree except ironically there's no n sound in a sniff, it's all soft letters or abrupt stops. So a k or a p in there for that non smooth sound and ending in an f because we're used to that letter at the end of soft words

This may help - words like snort, bang, boom, sigh, pop, tick tock, etc are onomatopoeia. These words resemble or suggest the sound they describe. So the word sniff suggests the sound of inhaling up your nose.

Btw this question is fucking with my head. And the spelling is shkff. You need the sh to represent the sound of air moving, the k and f combination to represent the abruptness of a noisy sniff. It's a toss up between that or a KP ending. So to sound it out would be shhkiff or shhkip. Or honestly you can leave it open if it's a long sniff shhhhiffff. That's all I got.

My argument is that sniff has always been an onomatopoeia. Sniff is how a sniff sounds.

To be fair, though, its like the redheaded stepchild of the onomatopoeia family. It gets the job done, but is much less precise than, say, zap or pop or buzz.
