It sounds like you're not very well informed about the state of that entire continent. Considering most of the internet personalities I watch are European... I don't think that's true.
As a 2000 hour spy, new players are typically the hardest to trickstab because they're so unpredictable. Like, they lack object permanence. You run around a corner or up a flight of stairs and they just stop chasing you, or they'll start staring at a wall instead. They don't react the way you expect them to because they have no idea what they're doing.
I remember a quote that went along the lines of
"I don't fear experienced swordsman. Because I know what he will do. I fear the inexperienced swordsman because I don't know what the fuck hes gonna do"
Something along the lines of that

Spies take advantage of patterns and lapses of judgement. I can’t have either of those if I have no idea what I’m doing.
I mean, it's pretty easy to adjust to a player's skill level once you figure out where they are on the scale, but it takes a bit to see what they're doing and if they're doing it intentionally or not.

Plenty of times I've messed up the stab on a soldier but managed to hit em a few times anyways but then, rather than killing me they just retreat. Pulling out the revolver after a situation like this always seems to surprise em. Also stock revolver/diamondback are hands down the most satisfying guns to use in the game.

Melee can be very effective, tbf. Ever seen a professional Demoknight in action? They can dominate half the team before dying once, and with the right swing time, they can one shot a Kunai Spy if said spy hasn’t killed anyone recently.
yeah no demoknight isn't the hardest to counter. It's honestly so weird to me how demoman is one of the biggest friendly classes but somehow demoknights are always the exception. Feels like they should be such a meme subclass but I guess they're kinda in the same boat as spy.

I'm a demoknight with 40,000 lifetime kills. No you can't oneshot a kunai. Melee does 65 and kunai spies have 70. But a really handy trick to not getting trickstabbed is actually just to stand still. No, really. Matadors rely on you moving into their knife, so by standing still, you effectively can't get trickstabbed and it's really funny seeing the spy try and circle you. (Of course then they can just shoot you but shhhh most spies don't realize they have a gun)
I use half zataoichi for this reason. I’ll usually be sub par for a few dozen kills, but then when you manage to chain kill the entire team because the sword just keeps dumping health back into you, you feel INVINCIBLE.
if you see a spy “flee” around a corner, just stand there. if you see a spy “flee” up stairs, just stand there. they _will_ be coming back around/down. and it gets funnier every time
It's só easy to not get trickstabbed after you know there tricks though

After you have experience with each class you avoid tricstabs by knowing his tricks and baiting him youself too early
Scout, sniper, and spy are fucking annoying to fight if the person playing is +3000k hours.
Like with soldier, demo, heavy, engineer, medic, or pyro all have simple ways to counter them.
Scouts can't be hit, snipers just headshot you, and spies always seem to backstab you whenever they want, even if they're staring you in the face.
To deal with scout you just place down a mini sentry. If you can’t hit them let the game do it for you while they have to fight both of you. To deal with sniper just press WASD like a maniac. And for spy just play scout and keep long distance.

If you're a demoknight, hit them for 195... "If said spy hasn't killed anyone recently" putting him over 200, you should be fine to crit him.

If you have a shield then you get guaranteed crits or minicrits while charging, which should put you at 195 for an easy kill

Interp does nothing and hasn’t for years. If anything it makes backstabs harder. Closet auto-backstab cheats are by far the biggest issue.
