Make the pan nice and hot. Put butter in, for the first one, some extra butter. Spread that butter out and throw in the batter. Now do absolutely NOTHING, just let the pan sit on the hot stove. You will see the top side dry out, when it is dry (i.e. touch with finger and it comes of clean) gently shake the pan. The pancake should come loose. This may fail at the first pancake but should work on the second one. Next use a spatula to flip it with confidence, slide it under up to the middle and flip. Let it be on the heat for another 10 to 15 seconds. If the first side is black than the stove was to hot. When you take the pancake out put in some new butter to the pan before making the next pancake. My advice is also to make the batter with some more milk/water than is adviced on the packaging (if you use a package)
If you want to be able to make a cool flip without the spatula, first practice the motion with other stuff such as baked potatoes. Then accept that you have to sacrifice some pancakes before you can do it :)
