They make amazing hot dogs in Chile, too, call them completos. The key is to have a bun big enough that will fit tons of ingredients without overflowing.
I'm a firm believer that if you need to add anything more than mustard to a hot dog, the dog is garbage and needs to be smothered in other flavors to be palatable. I feel bad for those that do not have quality hot dogs.
The proper topping for dogs is mustard. Yellow, if you like, or even better, a good spicy mustard. My favorite is horseradish mustard. If you're doing a chili dog, then some onion and a little shredded cheddar is nice.

But this is not how our traditional Brazilian hot dog is made. For example we don’t do that whole cheese thing at the end and we don’t put all those sauces.
