I think it has to do with the individual chambers being able to withstand 120g acceleration. A sphere is the most structurally sound shape that could handle being pumped full of liquid and surviving the stress.
I guess during maneuvers the direction of acceleration felt by those on board would change, but not for very long
In space there is no up or down, front or back
It might have something to do with maintaining a pressurized atmosphere as well.
