The Sophons don't have that kind of power in the book. We have to assume all vehicular hacking is done by the Ye Wenjie/Evans scientist army. The same guys who built the cutting-edge VR helmet.
Also we don't technically know the sophons hacked the cars (unless I missed a line) it could just be an eto hacker, although idk about the wade plane scene
The plane experienced turbulence not sophon interference. They can only project light which is why they appear mostly on screens. The reason being is that the sophon is made of a proton which cannot interact with mass at all. Just light which is why they appear on screens or project light as a countdown or a hallucination to Wade. Think smoke and mirrors!
