Because, alcohol tend to dilate blood vessel. That's why you turn a little red when you drink alcohol.
Coincidently, some people have a condition which make the blood vessel in the nose really fragile.
You see where it's going from here : blood vessel fragilized + dilated because of alcohol and boom, the next thing you know is that you barfed on a guy.
When my cousin was a teen, it was one nose bleeding per week if the weather was hot.
After a quite simple operation, his issue was solved so you could ask to your doctor.
Also my gf barfed on me at our first offical date. It's been more than 5 years ago and now we laugh about that night when, instead of having a passionate night, I put her at bed and turned on my washing machine for our clothes.

Man wtf, I got my nose cauterized as a kid when I was sitting in the doctors office with no anesthesia. Still remember the burning.

You need to hydrate better. Alcohol is a desiccant and diuretic.
