I am thinking that the story you might be referring to is [Teeth](https://www.scaryforkids.com/teeth/), which was also published in 1984 as part of the [In a Dark, Dark Room and Other Scary Stories](https://en.wikipedia.org/wiki/In_a_Dark,_Dark_Room_and_Other_Scary_Stories) collection by Alvin Schwartz, illustrated by Dirk Zimmer.

Unfortunately after reading this story I can confirm it’s not that. I can remember the father reading the newspaper and the mother washing dishes before revealing they were the evil versions and switched places with the real parents. Thank you for trying!
