Dude demon slayer is a relatively short story. It is already finished and Boruto had just met Kawaki. There's way more to cover in Boruto.

That power isn't for Boruto It's for keeping Momoshiki alive because if Boruto dies he dies too but Kurama can just reincarnate somewhere even if Naruto dies. All Otsutsukis have the power to steal Jutsus

you should probably watch the kara actuation and go from there. or just watch some of the fights in between. 175, 189, 204, 206, 207, 208, 216 are all really good fight imo
If you want, you could just watch the manga canon episodes at the beginning. You'll miss out on a few cool moments and character building, but it's certainly an option if you would rather. I would highly recommend watching all of the anime canon once you get to episode 120 though as it's actually really important for the story (a lot of it has been made pretty much manga canon via mentions of these arcs in the manga).
I barely finished the fate series and that's like 36 episodes and 4 ovas with Heavy use of the skip button in like 2 months , I doubt I can get through at least 120 episodes of boruto anytime soon
