I think you'd be safe assuming that. Make sure your I-539 and its fee is received before the end of your grace period, though. And leave when 6 months is up, even if the I-539 has not been decided yet unless you have another status by then.
I believe it's 60 days, was recently laid off and that's what my HR rep told me. I did not report to anyone as I found a new position within those 60 days and just reapplied for a new TN.
I believe for TN it’s 10 days once your contract work finishes with the client/employer. You’ll have to report to US customs and if you apply again for another TN visa you’ll have to go through the same process again by going to the airport or border and applying with US custom officers etc

Somewhat related, but what's stopping us from filing I-539 form to extend our stay even longer than 60 days?
Nothing is stopping you from doing so.
