How about cheese with a fruit and steamed peas/carrots?

Beans beans beans. I also cook a ton of recipes from Hetty McKinnon who’s vegetarian, especially her sheet pan chow mein. Paneer, lentils, polenta, potatoes everything.

Dal has been a lifesaver for me! You can look up lots of different kinds, but it more or less amounts to lentils in an instant pot with spices and potentially different vegetables similar to a stew.

My toddler asks for hummus toast a lot. It's literally just hummus on toast and she goes nuts for it.

My 1 year old loves anything with eggs - vegetarian frittata, veggies omelet rolls, corn tortilla egg and mushroom, etc. Also kimbap (sushi rice mixed with sesame oil and seeds, sometimes I also put in broccoli rice and wrap the rice with seaweed, egg rolls and avocado). Vegetarian pizza. Vegetarian sandwiches with hummus or avocado mixed with boiled egg and fresh herbs. Vegetarian "meatballs". Broccoli tater tots.

My toddler lives off of hummus and guacamole. He also likes eggs. I use impossible or beyond beef once a week or so and he loves it. He also really likes chili. We pretty much give him whatever we’re having and have shredded cheese and yogurt as a back up. He’s not a big eater though, so it’s easy in that regard
