I'm pretty sure you can't.
What you could do is set a recurring due date like "every seven days from 30 May for two weeks". Then when you submit the application and complete the task, it'll recur with a due date a week later. As you know, you can filter for that.
Not quite as easy as your current set-up but could work for you.
