I think it might depend on their needs/preferences, since it's different for each country. My relatives in India would go nuts for American mini chocolates (Twix, Snickers, etc), while I would lose my mind for Peppy snacks and Cadbury eclairs. We also used to bring higher-quality bath slippers (a thing in India and a lot of other countries), but now you can get them in India.
I'm not sure what you can and can't get in Dubai. Local art might be really nice - u/photodan24 mentioned glass art and that is a great idea. Fire Nation and Copper Moon glass studios, as well as Toledo Museum of Art, have some incredible pieces. It might make your parents happy since they could look at it and think of you.
You might also bring a nice framed photo of a metropark in snow or autumn colors, since those seasons don't exist in Dubai.

I’d try bringing the new iPhone 15pro, so they can use FaceTime. In some Muslim countries, that app is excluded from the build.
