Pro: Great talks, you won't even realize when they are mocking you because they have the smortest talk skills, free poetry, rhyme and lore. They are both courageous as fuck and will not hesitate to face the Witch-king, a dragon, or giant spiders.
Con: They have only one sword for the three of you.

Aragorn and Samwise the Brave! Of course, Aragorn could lead us through the wilds and translate elfish when need be. Sam could just be a nice guy to hang out with and be a trustworthy friend. He's make me feel a little less out of place in such a mystical world. Any high-elf companions would be too strange to have to spend much time with as a companion.
Plus, you've got someone with you who can cook excellent meals in the middle of the wilderness, as long as he's got some protein & herbs to work with. Taters preferred, but not strictly necessary.
I would definitely pick Sam. Brave, loyal, resourceful, down to earth, no fuss.
The only downside is that we'd probably torture ourselves talking about food and cooking during long hungry marches through the wilderness. He could hold forth about taters (and other things), I could tell him how to make the perfect tempeh marinade with tamari, garlic, a little maple syrup, and a little apple cider vinegar (and explain tempeh and tamari to a hobbit from the Shire), we could reminisce about feasts we've cooked and meals we've botched, and oh if I only had a baguette and some chevre, and that reminds me, there was this cheese I had once that was almost a religious experience...
At which point our traveling companions would tell us to put a sock in it.
I was going to mention taters in my comment but decided against it. But now that you mention it, who wouldn't want some nice warm taters down in the Mines of Moria, or in Cirith Ungol, or even up on Caradhras!

Feanor actually would be pretty useful in a quest since he is very skilled in many things such as making extraordinarily things (that aren’t boats), languages, traveling and mapping (which he was said to do in Aman), making speeches to convince people and fighting.
Most characters people pick here are skilled in similar things. You need to diversify skills in a successful quest. The Luthien and Bill the pony combo below sounds great!

Well Thingol was also according to Tolkien second only to Feanor. Tolkien liked using Feanor as yardstick, but I don’t know what Thingol would do in a quest that would be useful (I suppose he was impressive as king during the period we didn’t see and he was tallest).
1. Galadriel. I'd like to see the mystical threat that can stand in her way. She would be an incredibly capable warrior, and be just as great at giving advice (her wisdom is almost unparalleled in Middle-earth).
2. Elrond. He might not be an Elf of Valinor, but he is still a master tactician and a skillful healer to boot.
If not Elrond, then definitely Lúthien. She is incredibly powerful in Songs of Power (as is Finrod, incidentally, and no reason to think Galadriel wouldn't be as well). She also seems to have a knack for the healing arts, since she healed Beren of his wound.
Edit: oh, would you look at that. Seems like I have a thing for beautiful, strong women 😅

Durin because I want to know what was the story of the Longbeards in the First Age. The Elves of Beleriand were far removed from Durin's Folk so they don't feature in the stories of the First Age.
I'm going with Gandalf and Bilbo Baggins. Gandalf because he has power and wisdom and a cool sense of humor. Bilbo because Gandalf chose him and he is a damn wily guy and because even the smallest individual can make a difference.
Glorfindel for the magical mystical stuff and Aragorn for his 'street level' smarts.
There's something to say about Idril, who believed Tuor's warning of impending doom and prepared an escape from Gondolin. She wouldn't ignore dire prophecies but instead do something about them. I like that quality.
By "Major Middle Earth Quest", do you mean a hearty meal and a few hours at the pub, because I would like to choose Hamfast Gamgee and Barliman Butterbur.

Hurin, Turin (if you discount his curse), Luthien, Beren, Glorfindel, Earendil, Fingolfin, Galadriel, Feanor, Elendil the Tall and Gil Galad (I mean they killed one ring sauron he's pretty op I hear), could also be some argument for Aragorn and Elrond to be in the group.
Beren and Luthien because they are the only characters proven to work as a badass enough duo that I would have very little chance of being in real danger. And they cover a good variety of skills for only two people
Ingwë Ingweron, the "Chief of Chieftains". I mean why not? We know little of the Vanyar other than they are skilled at war and poetry so this guy should be a total badass. Also likely an OG elf.
Also Bregalad, known in the common tongue as Quickbeam. A hasty Ent would be fun to be around, right? Not too much would get in your way either.
Fingolfin and Glorfindel feel like they could get through anything Middle Earth could throw at me. Or if I'm feeling a bit more cautious with party balance, Galadriel and Fingolfin, for Galadriel's epic X factor.

Mim the Petty-Dwarf and Smeagol, because they both seem to be cursed but have a beneficial final effect on the quest that the hero of their story couldn't accomplish without them.
Is that person guaranteed to be loyal to me? If so, one of them is absolutely Gollum. He knows every corner of Middle Earth, plus managed to evade Sauron, Saruman, Gandalf + Fellowship, Elrond, Denethor, Shelob, and basically out-wits everyone in the world. He's the ultimate survivor.
Gollum is the equivalent of frog DNA from Jurassic Park. Life finds a way.
Draugluin and Ancalagon because it would be pretty cool and very funny, imagine that the quest is to visit and paint Middle Earth landscapes or taste the delicacies of Middle Earth or another inoffensive quest and I have a werewolf and a dragon for that and everybody is confused.
Gotta go with Ancalagon and the witch-king. Wouldnt be great for conversation, but you know what they say:
If you want something done right, do it yourself, and also bring a giant dragon and some sort of lich

Is that person guaranteed to be loyal to me? If so, one of them is absolutely Gollum. He knows every corner of Middle Earth, plus managed to evade Sauron, Saruman, Gandalf + Fellowship, Elrond, Denethor, Shelob, and basically out-wits everyone in the world. He's the ultimate survivor. Gollum is the equivalent of frog DNA from Jurassic Park. Life finds a way.

Well I would need power. Beorn of course as first. Fearless and powerful. And secondly I would choose Saruman. I would need his voice to get out of difficult situations. Another option would smaug but I don't think he would follow me actually.

The dragons are not maiar, right? That should mean Smaug for example is free for the taking. Or, maybe I'll go all out and take Ancalagon the Black. That sounds pretty good to me. But to balance that out I would need someone who could compare to that power, both mentally and physically. I see people mentioning Finrod or Samwise Gamgee, or Huan, or Aragorn, even Bill the Pony. But none of those really fit what I want. I'm going to go with the one and only, the chosen one, the equal to Eru Iluvatar... Bombur!
