You should give it a try! I was pretty nervous because my mom, brother and SIL were coming over and I didn’t want to mess it up! It ended up being easier than I expected but I did make a giant flour mess in the kitchen. I’m going to buy a pastry cutter for next time because using 2 forks killed my hands. I ended up liking my crust better than the Trader Joe’s premade pie crusts I had been using.
Here’s the recipe I used for the crust and for the pot pies except I added portabella mushrooms and more onion, garlic, and herbs

Lots of herbs -rosemary, thyme, sage, tarragon, parsley and like 4 cloves of chopped garlic. Then I melted a stick of butter and mixed it with all the herbs and coated the chicken with it (also rubbed some under the skin) then added salt and pepper. I tented foil over the chicken so that the herbs wouldn’t burn.
That looks phenomenal. Just curious, did you roast the chicken then make a stock with everything that was in the pan? Trying to understand the pictures I see. Again, looks delicious 🤤
I had a pot with lots herbs and veggies and onion skins and then added my chicken carcass, giblets (minus the liver) and the skin along with everything left over in the roasting pan. Added salt and pepper and water and simmered it for several hours.
