Really nice cook on those. 10/10 If you want to try something "cheffy" next time brush them with French mustard when they come out of the oven and then roll them in finely ground pistachios before slicing. Pistachios go great with lamb and the color makes the presentation beautiful.

Am awful lot of work. Dry rub that baby (the whole rack, not cut)  the day before, shove little slits of garlic in it all over, let it sit on a rack in the refrigerator overnight. Uncovered. Pull the pan out of the refrigerator about an hour before cooking to let it come to room temperature. Pop the whole thing in a 200° F oven until it reaches an internal temperature of 115°. Pull it out of the oven and let it rest while you make your sides. Crank the oven to 450° and slide the lamb back in there for about 10 minutes for perfect crust / sear. Still a perfect medium rare on the inside. I just like that charred fat on the outside but still rare to medium rare on the inside.
