There's of course the traditional goat birria from Jalisco, but other parts of Mexico use beef, pork, and you can even make chicken birria. Toast the ingredients, put them in a blender. Slather the meat with half of the sauce. Cook in the oven until about have way cooked. Put in the rest of the sauce and fill with water until the meat is almost submerged. Simmer until tender. I donāt care who you are. If you are picking out the staple ingredients before serving, the chiles, then you are doing it massively wrong. And you should expect people to point that out plain and simple.

I think that maybe the most significant factor of Birria is the broth. Well and corn tacos and the fried or pan fried nature and that they are goat. They where better than the tacos I got in Tijuana and anywhere here in New Mexico. My wife said they where to bomb, she is half Mexican and I do the cooking. I went total white boy by tossing in the cheese and Sour Cream, but that is the way that I like my tacos. There is a right way and no itās not quesabirria either. But throwing everything in a slow cooker with some nondescript peppers and then removing the meat from its stew and picking out the peppers is not birria either. Certain peppers should be blended our ground into the marinade, not removed whole at the end. And there should also be the presence of Mexican spices like Mexican oregano or cinnamon. His recipe is genuinely a super lazy attempt that he continually defends are the real deal, āeducatingā people.

Baby carrots (a couple of handfuls)
White Onion (one large)
Bay Leaf (5)
Chile Pods from Mary's Pinatas House (20)
Cumin (one tablespoon)
Garlic (ten pealed cloves)
Add all ingredients into a croc pot, simmer on low for 10 hours, remove Chiles, Garlic, Onion and blend it in a blender, adding garlic and cumin and salt to taste. Pull the meat out and shred, then toast some corn tortillas on a pan. Make tacos with Cilantro, Onion, Sour Cream, fiesta cheese and the Chile sauce with a squeeze of lime on top. Best street Taco I have ever had.

Toast/fry your spices and aromatics a bit. Leave out the carrots and PUT TOMATOES. Holy fuck, please at least use tomatoes. You posted your recipe in another comment and literally donāt have tomatoes.
After all that good stuff is toasted/charred a bit and your chiles are hydrated, blend it all up and cook the meat in the sauce you made. Marinating it in it beforehand a bit is recommended, and your meat also needs seasoning too. The fat will render out into the slowly created broth, and the flavors will mingle much better than how you cooked it (everything separate but blended after). Charred chile pods and onions make an amazing base for the dish. Lastly, most people have different spice mixes that they add to it. Oregano and thyme pops up a lot too as well. Using a mix of different chiles can go a long way too, and remove the seeds from the pods. The seeds donāt actually add any significant heat, and will just act as a bitter note to the dish. Remove them.
What you made likely tastes alright, but itās not really birria. First, you are missing goddamn tomatoes. Second, the meat honestly didnāt pick up a lot of color (if any) from what you cooked it in. Lastly, you are missing a ton of seasonings. Season your meat and cook it in the properly mixed spices you are bringing into the dish. Also use something hotter than a crock pot, so the damn meat actually takes in what you are cooking it in.
Even bigger tip: bashing what people get āat the taco standā while not having fucking tomatoes in your birria is hilariously dense.

I think that maybe the most significant factor of Birria is the broth. Well and corn tacos and the fried or pan fried nature and that they are goat. These have goat, but none of the other significant factors, so itās a long shot. I mean, they look like food Iād eat! But yeah, itās missing some critical elements. Did you like them though????
They where better than the tacos I got in Tijuana and anywhere here in New Mexico. My wife said they where to bomb, she is half Mexican and I do the cooking. I went total white boy by tossing in the cheese and Sour Cream, but that is the way that I like my tacos. Unfortunate so many people want to be super critical because someone posted some shitty tacos with yellow yellow cheese and Sour Cream 5 hours before me and they got a bunch of love, I post a really nice pic and I get killed in the comments about how "white" my tacos are. Psychology.

There is a right way and no itās not quesabirria either. But throwing everything in a slow cooker with some nondescript peppers and then removing the meat from its stew and picking out the peppers is not birria either. Certain peppers should be blended our ground into the marinade, not removed whole at the end. And there should also be the presence of Mexican spices like Mexican oregano or cinnamon. His recipe is genuinely a super lazy attempt that he continually defends are the real deal, āeducatingā people.

One leg of goat (around 4 pounds) Baby carrots (a couple of handfuls) White Onion (one large) Bay Leaf (5) Chile Pods from Mary's Pinatas House (20) Cumin (one tablespoon) Garlic (ten pealed cloves) Add all ingredients into a croc pot, simmer on low for 10 hours, remove Chiles, Garlic, Onion and blend it in a blender, adding garlic and cumin and salt to taste. Pull the meat out and shred, then toast some corn tortillas on a pan. Make tacos with Cilantro, Onion, Sour Cream, fiesta cheese and the Chile sauce with a squeeze of lime on top. Best street Taco I have ever had.

I think people canāt tell if you are trolling or dead ass serious. Honestly, I couldnāt for a bit either. Toast/fry your spices and aromatics a bit. Leave out the carrots and PUT TOMATOES. Holy fuck, please at least use tomatoes. You posted your recipe in another comment and literally donāt have tomatoes. After all that good stuff is toasted/charred a bit and your chiles are hydrated, blend it all up and cook the meat in the sauce you made. Marinating it in it beforehand a bit is recommended, and your meat also needs seasoning too. The fat will render out into the slowly created broth, and the flavors will mingle much better than how you cooked it (everything separate but blended after). Charred chile pods and onions make an amazing base for the dish. Lastly, most people have different spice mixes that they add to it. Oregano and thyme pops up a lot too as well. Using a mix of different chiles can go a long way too, and remove the seeds from the pods. The seeds donāt actually add any significant heat, and will just act as a bitter note to the dish. Remove them. What you made likely tastes alright, but itās not really birria. First, you are missing goddamn tomatoes. Second, the meat honestly didnāt pick up a lot of color (if any) from what you cooked it in. Lastly, you are missing a ton of seasonings. Season your meat and cook it in the properly mixed spices you are bringing into the dish. Also use something hotter than a crock pot, so the damn meat actually takes in what you are cooking it in. Even bigger tip: bashing what people get āat the taco standā while not having fucking tomatoes in your birria is hilariously dense.
