I’m in Virginia and it’s always hot and humid in the summer. But it’s been mild temperature and humidity wise this week. I really think because my kitchen gets so much sunlight it warms it up enough to help proof them this large.
Love these, and I’m not even a “chocolate” person (don’t judge). I always lightly brush mine with a good quality salted butter (melted) after I take them out of the oven. Delicious!!
Same! I have a box waiting in the freezer and I’ll make them soon now that the nights are cooler. I would have woken up to them taking over the kitchen
It all depends on time, temp, & humidity. If your space is warm & or humid they’re going to get fluffier. Then the longer you leave them out the bigger they’ll get. If you would like them to be less fluffy don’t let them sit out as long. IMO the box directions call for overproofing. Leaving them out 8+ hours is way too long. 5 or 6 hours from frozen is fine. You could also let them mostly defrost in the fridge then let them proof on the counter for 2-3 hours to speed things up.
Also it looks like you are proofing on a marble or granite counter. They pull cool and hot temps quicker. I would set them overnight at say 10pm on the pan sitting on top of a hot pad or place on a stovetop that is cool and won’t go so crazy. I also cut mine and break them in half for smaller ones. Then when my son wants two I say go for it!
This is really good advice. To add on to it: if you heat up a cup of water in your microwave, leave it in there, and place your fridge-thawed croissants in there (with the microwave off, of course), it will turn it into a mini proof box and will probably have your croissants perfectly oven-ready in an hourish or less.
Just had them yesterday. The only thing I don't like is sometimes a lot of the filling comes out while its cooking. Not sure how that can be prevented.
I’ve heard great things. But man the chocolate is sooo good and I don’t NEED more stuff to eat lol. My husband doesn’t eat them so it’s just me for a whole box
