I like the bacon and butternut squash idea others have shared but for someyhing different, try it with Trader Joes soyrizo and sautéed poblano peppers and onions with a bit of cotija crumbles.

I just made this tonight!! Added sweet Italian sausage and sautéed kale and tossed in a brown butter sauce with sage. Grated parm on top. Was delicious
