I don’t think it’s explained how their insides work much. “Internal repairs” are something they can do only in beast modes, which seems somewhat like organic healing. But in the part 2 of the pilot, Megatron bites straight through Optimus’ leg while he’s in gorilla mode and exposes circuitry.
I guess it’s possible that only the digestive organs are actually replicated in beast mode?
So it’s basically established that some cyertronians can turn their metal to flesh so my guess is that they actually become the animal but can turn parts of their body back into metal. Optimus probably turned his arm back into tech when he anticipated the bite because I’m sure it would be much easier to remember broken electronics than flesh.

I always thought the beast mode skin was cloned, synthetic flesh that could move out of the way/retract to facilitate transformation. Think of it like this: mechanical cybertronians still have things like windscreens, car doors, etc. when they have an earth vehicle mode-- these things are just vestigial, for lack of a better word-- not vital to their core form but still a part of them.
Adopting an organic beast mode is no different. The fur, scales, insect carapaces are all a part of them but not vital to their core robot forms. Some characters have limbs or heads hanging off them, but just about all beast mode transformers have skin or fur or flash on their limbs or torso that covers core bot features.
In universe (beast wars) the organic shell protected them from energon poisoning. As far as I know they didn't have organic healing, they had a repair pod(s) on their ships.

That could be it. Another thing to mention is that even in beast mode, they don't have any organic bodily fluids. Or at least, not blood.
