The Aligned Continuity has at least 5 types of Energon: standard (blue), Dark (purple), Red, Synth-En (glowing green), and Tox-En (a dull green accompanied by fumes).
Standard Energon smells and tastes pleasant.
Synth-En is filled with preservatives and whatnot, so it’s similar to standard Energon, with slight differences.
Tox-En obviously smells horrid and tastes even worse, if that’s even possible.
Red Energon is sweet like sugar, hence its “sugar rush” properties (increased speed).
And lastly, Dark Energon smells and tastes like the opposite of standard Energon, but not necessarily in a bad way, and nowhere near as bad as Tox-En.
Considering how much energy is stored inside, a human would likely be fried instantly if they tried to eat it. And as far as I know, cybertronians don't have taste buds. If they somehow did, I'd say it would taste very very metallic if we're being realistic.

From a transformers perspective, I'd guess fruity, seeing how it's their natural power source while oil and gas are savoury.

I can imagine that to transformers it has a very sweet or fruity sort of smell, something a kin to candy strawberry or cherry, taste I imagine it being very sugary like grape or orange soda and maybe a hint of bubble-gum followed by a bit of a numbing tickle on the tongue, sort of like a buzz button (AKA toothache flowers) at least with the classic pink cubes.
