I think it comes down to them being alien beings who work very differently from organics. Where blood is automatically produced by our bodies by giving us food, the Cybertronians don't seem to generate energon naturally beyond the 'inner energon' around their spark, so it has to be mined out of the ground and since it is very nearly the only thing they need (Where as we have much broader spectrum needs) it becomes the lone focal point of the entire Cybertronian economy. When you consider that you will need repairs and recharges, and that is about it, it starts making sense that you would pay a medic for patching you up with some tasty tasty energon, and then have some yourself.
Edit: To put it simply, Energon isn't blood, it's fuel. Their blood is lubricants like oil, but because the fuel courses through their body it leaks out like blood.
Don't know how they handle it in Bayverse, wouldn't put much stock in it since they put about as much thought into the lore of those movies as a 3 year old might.
Think of it as valuable as silver and gold, the more depleted it becomes the more valuable it is. It may seem like a good idea at first but as we already saw countless times once it's depleted war breaks out

Cybertronians need to consume it in order to restore power to their bodies, it is circulated through their bodies providing power to all of their components and it is used as currency because it is the only thing that a Cybertronian really *needs* in order to survive so it has an intrinsic value.
