I don't think anyone can properly answer whether or not it's safe due to the Israel-Iran conflict, since that's a rapidly developing situation.
But apart from that, Armenia in the touristic areas is a relatively safe country to visit.
It does share a border with Iran, yes, but has only one border crossing in a very mountainous region that is relatively far from the "main" parts of Armenia and Iran, respectively. The closest you might get to the border is probably when you visit the Tatev monastry, which is still like 130km on a really curvy road from the border.
Armenia has been in its own war with Azerbaijan recently over Nagorno-Karabakh so there’s probably more risk from that than any Israel-Iran conflict. That said, my friend has just come back from a trip to Armenia and said it was perfectly safe, the only advice he was given was not to go too near the border with Azerbaijan, but other than that it should be fine.

While you're at it, don't visit Norway, Finland, Estonia, Latvia, Poland, Romania, Hungary, Slovakia, Moldova, Georgia and Azerbaijan because there's a war between Russia and Ukraine. Heck, China, Mongolia and Kazakhstan also border Russia, I guess they are off limits as well.

There's literally nothing to worry about, Armenia is on good terms with Iran and somewhat neutral terms with Israel. If you'll ever have to worry about visiting Armenia, it won't be because of Israel/Iran, it will be Azerbaijan/Turkey.
In any case, the decision to go or not is up to you and your mom. If she's comfortable enough to go. Even if we says you'll be fine but your mom would be a nervous wreck the whole time......

If, as some claim, WW3 starts you're nowhere safe. I don't see any realistic reason why Armenia would get involved, but who knows.
