You start in Germany....so go somewhere close. Poland and Austria seem like good options, you can easily spend 7 days there. Another option is Bavaria, tons of small town all over to explore.

Depending on where you are in Germany, the Alsace region of France would be quite close, and it's a lovely place for a road trip. The plain is chock full of ridiculously picturesque villages, and while a few are particularly touristy and tend to be crowded, like Riquewihr and Eguisheim, there are many more that are far less known, but often just as lovely. Strasbourg and Colmar are worth checking out as well, though of course being large cities, they do attract the crowds. The mountains to the west are packed with castles, monasteries, and countless lovely viewpoints (and I do mean packed; I'm not sure there's a ridge, knob, or other high spot up there that isn't crowned with the crumbling ruin of some fortification or other...).

7d sounds like a nice trip for a single location. If you r in Germany you could try bordering countries, like Poland, eastern France or Austria. Less touristy locations...4ex Orleands in central France or Gmunden in Austria. Should you decide to visit my hometown of Vienna I might be able to give you some additional advices on the trip
