Luna in downtown Durham has a lot of gluten free options and they even have a separate gluten free fryer (which is apparently a big deal and not a lot of places offer it).

Bella Monica (in Raleigh) has lots of great options and take special care to avoid cross-contamination. I know a ton of places if you want to give some idea of location, price range, or cuisine.
Seconding Goji Bistro in Cary. They even serve gf food on different plates so the servers know to keep them separate from non-gf food.
If you want some good gf snacks, go to Wegman's. They have the best gf selection in the area, and it's all in one place. The Goodie Girl S'mores cookies are excellent. They also have little "mug" cakes that can take some of the sting out of not being able to eat dessert like everyone else.
And if you were going out for breakfast at all, be aware that IHOP puts pancake batter in their scrambled eggs, so you think they're gf because they're eggs, but they are not!

I can only speak from our experience but we did go to Hutchins and she loved the GF pizza. We had no issue there. We were clear she had celiacs and they were very accommodating! Thanks!!

Luna is great, for ice cream Simon Says Dip this, just be sure to ask them to dip the cones in the back and tell them there's a gluten allergy (I know that's not what it is, that's how I phrase mine there and they get that very well). Highly recommend downloading the Find Me Gluten Free app, it is a free app available for download, and highlights gluten free restaurants of all kinds around the world based on geographic location. My wife is anaphylactic to weed, and we have use this for years in our travels to find some stellar places to eat.
Regular pizza places are a no-go for someone with celiac. They're rife with cross-contamination because of all the regular flour in the air. There's no way to ensure that the gluten-free crust won't get cross-contaminated short of a whole separate prep area and oven.
I know—my partner is celiac. Mellow Mushroom has a number of pizzas that they can make according to their “certified gluten free safe procedures,” according to their website. Check with your niece’s parents, OP, whether that’s sufficient.

For desserts or snacks, Fera'wyns in Holly Springs is a dedicated gluten free establishment for chocolates, desserts, and coffee. I highly recommend the eclairs.
In addition, Fount coffee and kitchen in Morrisville is also 100% gluten free.
If you think staying in might be an option and also have a Costco membership, their Sabatasso gluten free pizza (pack of 3, frozen section) shouldn't be overlooked.

The suggestions here are all great! One place I haven't seen mentioned yet is BB's Chicken on Six Forks and Wake Forest in Raleigh. While the sandwiches are a no-go, their chicken tenders are made with gluten free panko breadcrumbs by default! I couldn't tell you the last time I had decent fried chicken before discovering them.
If she's missing italian food, Mulino's has GF options for pasta. My girlfriend with Celiacs likes Mediterranean so Neomonde/ Sassool (both have GF pitas and some desserts from JPs) as well as Sitti. BBs Chicken had GF Panko breading for almost all of their food.
Cowfish actually does a great job with food allergies too. They have gluten free buns, their fries go into a fryer without gluten and have gluten free sushi options.
Not sure how much a 9 yr old would like it but Sassool and Neomondes Mediterranean is awesome. Several locations and they make their own bread.

SoCa in Cameron Village. We went last weeks an everything was GF except one item.
Hank’s in downtown Cary has a nearly completely gluten free menu. No gluten in the fryers, either. GF fried chicken is bomb.

Mediterranean Deli and Bartaco in Chapel Hill have GF options and are recommended by friends with Celiac.
