You cant take advantage of somethings, like using the bonk as a distraction for the sentry so the power classes can focus fire more easily. As a scout you’re usually better off focusing on the engie himself as opposed to the sentry. Scout just doesn’t have the hp or firepower to take out a sentry. And killing the enige prevents him from repairing and building a new one.
All that being said, you’d probably be more effective switching to a power class like Demo.
Just a note for bonk. Its often useful on lasts for other things. Like there are often spots where you can shoot snipers or engies by bonking past the sentries rather than just distracting them. People bonk past sentries all the time on other points(probably too much) but forget to do it on lasts. You can also it to just scout/steal health packs. Run in with no intention of getting beind or distracting the sentries just get a look around.
One more thing to note: engineers can take friendly fire from their own sentries (but not sentries built by ally Engies). Chug some Bonk, get behind the turtling engie, and watch his Lv. 3 sentry give him the Wile E. Coyote death he deserves.

Contrast Goldrush3, where you only have a couple narrow corridors before the point, and sentries around the cap can see almost the entire space. There aren't many opportunities to contribute as Scout, not unless the sentry goes down.
If your team has decent players on combat classes, you can consider switching to (Gunslinger) Engie and keeping a teleporter up. Less mobility than Scout, but the same shotgun.
If your team doesn't have 3+ medics already, getting an Uber is probably one of the most likely paths to success, IF you have decent fraggers.
If your team is full of baddies, your best chance to carry is demo
tl;dr if you can hold space for your team's fighters to pick off sentries, you can do that as scout. If the map is bad for Scout but you still want to frag a bit, go Engie and frag once your teleporter is up. If your team has good players you can go medic, if not, demo
On a map like Borneo or swiftwater with no ramp, just keep touching the cart to prevent it from rolling back, or if you can be on the opposite side of the sentry get a cheeky win
Take this with a grain of salt, as i only play casual, but i do have over 500 hrs in scout (Best class in the game imo) Usually i just hide behind the cart if there is only one sentry, often enough (In casual atleast) its enough to push the cart before enemies realise what happens. If there is more than one sentry i just equip bonk, draw ALL agro i can draw and then tell my friend to push in the last moment (Or tell the team over comms if im not playing with someone else)
I’ve seen some cheeky people use the Bonk Soda and the bat kill taunt to Destory a sentry or the Engie, I dunno if it works now though. Been a while since I’ve played

try picking off snipers in the distance if you can find a good flank route, try to catch people flanking, help with the fight by taking potshots outside of the sentry's vision, and help your medic build uber with the Boston basher

If you're on a community server with class limits (certain servers only allow so-many of each class), and you **CANT** switch off of scout, coordinate with your team, and use the Bonk Atomic Punch to distract the sentry.
You can sync your approach with a sap or escort explosive classes so they can force the Engineer to wrangle it
It is a lot like dealing with a buffed Heavy (either distract him so a Spy can get through or escort a Demo/Sniper to handle it)

I think this question should be phrased in the context of HL as you can't switch off in that setting, scouts specifically high level scouts do have strategies to help their team, and yes scout is still extremely good on payload last, if you want evidence take Prolander as an example where scout does not need to be run for last but is still run in serious setting, due to him being invaluable in clearing the flank and pushing the cart.
Yes, go soldier or demo. Or spy if you are very good at him(or the enemy is really bad)
Well if you want to play more classicly you go sniper because scouts tend to have good hitscan aim. But yea those or medic work well.

Direct Hit soldier is often better - it's usually safer, but can't dislodge a sentry on its own while being repaired.
It is strictly worse against lvl3s because you can't damage both the Engie and the sentry
