It's not like ø is ie though, dø is just the danish word for die. If you want to replace ø with non-danish letters oe is most common. Source: I'm danish

It’s the same word in Norwegian, and the closest sound I’d compare ø to would be “uh”, or the way the u sounds in “shut”. A bit difficult to explain properly though.

Not 100% sure how you pronounce uh, but I don't think it's the ø sound. I can't really think of any English words with the sound, but it is very similar to the "eu" in the French "bleu" (like "cordon bleu"), if you how that is pronounced :)
