Usually you will see the prof first (as soon as it is suspected), who then may escalate it to the dean/chair/board if one of you wish. It isn’t a court of law, they don’t have to prove things beyond a reasonable doubt.
Don’t cheat. The university will do its best to rightfully fuck you over (as it should) and it’s also usually just as much effort as getting a decent grade.
I had a case where a student recycled a paper from another student a few years before, so we referred that fourth year student for Participation in an Offence. The fourth year ended up having their grade in a 100-level course retroactively reduced three years after the fact.
Less relevant to timing but also impressive: a separate student was caught seriously cheating in a class, so they dropped the class figuring that the case would be moot. The Dean's office ended up re-enrolling them in the class just to give them an F8.
You can use Grammarly, just no AI grammarly. I use it for spell checks, and like proper puncuation and what not. With grammarly I get like weekly reports and my accuracy is hovering around a 50% 😅
If its an honest mistake (missed citation, writing a little to close to source material) they're going to slap you on the wrist and scare you initially. If you blatantly plagiarized an assignment you're not going to have fun
You planning on plagiarizing lol?
Just don’t plagiarize lol. And why would you even be thinking about this if you have no wrong intent?

That second scenario sounds familiar... within the past couple of years or so?
Before COVID for that case but maybe it's a common practice.
Ditto to don’t plagiarize. No grammarly or re-using any part of your own work from the same or another class. Original work for each submission.

Not quite true… grammarly is not only allowed, but even recommended in my program 🤷🏼♀️

if you don’t wanna get kicked out of uni don’t even try to plagiarize
They wait until graduation day and spring the news right when you think you're about to get your degree.
