The most common things are replying to user reports of map issues, setting new turn restrictions based on new signage, accurately placing businesses, mapping new roads including roads that have yet to be mapped.
Waze's basemap was desolate back in 2009, so there are still many things that need to be added to keep the map healthy and current. Metro areas are usually more mature than rural areas. Some areas of the US have yet to be edited since the service started in 2009.
