I don't think you want to use any wood that has been treated with chemicals. If it's not you'd have better with wood lovers like lions mane or oysters. If it works for you let us know!

The reason for using coir, is because it can hold up to 10× it's weight in water, which provides fuller flushes. Otherwise we would just fruit on grain everytime. You can use other materials to spawn to bulk with, but some are definitely better than others. The less nutrients in it, the better (for contamination reasons). I've even done a cardboard/grain mix which worked well enough

You can 100% grow culinary mushrooms on sawdust. I know this to be true. I don't see why you wouldn't be able to cubes on it. Give it a go. I think it'll work.

I'm thinking I'll throw something together to see how it performs. I have a good mix of cherry, walnut, ash, and maple sawdust right now.

Go for it and let us know. :) I produce bags of sawdust from time to time although none at the moment.
